Pumpkin Protein Pancakes

Ingredients:

1/2 cup canned pumpkin
1/2 cup old fashioned oats
5 egg whites
Pumpkin Pie spice to taste
Maple Extract to taste
1 oz walnuts

Directions: Mix all ingredients together in a bowl, and allow to sit for 5 minutes. Pour ingredients onto greased pan and cook at medium heat for 4-5 minutes on each side. Top with your favorite topping! I like apple butter or Trader Joe’s Maple Syrup/Agave blend.
